Ferment - Inspired by the unique flavors of fermented products, is the latest creation by Rezi Tsetskhladze, an authentic wine gastro bar. It’s a place where you can discover new tastes.

The location is specially chosen for those seeking adventure – the wine bar is located in Sololaki, near Gudiashvili Square, though not directly on the square, making it a bit tricky to find. However, as Rezi points out, this is part of the concept.


In this boutique wine bar, you can taste any fermented drink that suits your mood: wine, cider, beer, kombucha, sake, baijiu, soju, and grape-based spirits.


At Ferment wine bar, the main focus is on natural wines. “Natural wines somehow have more authenticity. You can even find character in a flawed wine. Sometimes, a slightly volatile acidity can make the dish more interesting,” says Rezi Tsetskhladze.


You can pair Georgian wine or international fermented drinks with dishes from a seasonal menu. Every Friday, there’s an opportunity to taste authentic dishes prepared by a guest chef.


On September 28th, the famous chef Lia Deida will take you on a journey through Imeretian gastronomy at Ferment. You can finish your delicious adventure with a pairing of Pedro Ximénez, also known as Ivlita, and the French cake Marjolaine.


Rezi himself hosts at Ferment, which makes visiting this place even more interesting.
