Achi Zautashvili


 

I am Achi Zautashvili, a winemaker by profession. A student of viticulture and winemaking at the Agrarian University and a wine consultant at the Abashidze branch of 8000vintage.


How I got to where I am today?


Viticulture-winemaking is an 8000 year old continuous culture of our country, the in-depth study of which is a great challenge and responsibility for me. I believe that this field is very promising, because it is always developing and very diverse. I always wondered what the thought and philosophy was behind this process. For the reasons mentioned above, I decided to apply to this faculty and get to know it in depth.


Why I chose this profession:


Since the first year of the university was an orientation and students were given time to choose a specific faculty, I decided to work in the field of wine, specifically in a wine bar and shop, and het practical experience. This activity further helped me to make a decision. Past experience has shown me one important detail – a person can spend hours washing a pitcher in the cellar, but the next day sit at a beautifully arranged tasting table and taste the wine from the same vessel. It was because of the discovery of this contrast that I choose this profession – the difficulty of creating wine and then the beauty of getting to know this product and variety.


My goals is:


At the expense of the university and a little experience accumulated in 8000 vintage, together with my colleague, I started conducting student tasting in the above-mentioned wine bar, which involves inviting viticulture and winemaking students and conducting introductory themed tastings. My goals is to share my knowledge and experience with as many people as possible, help them to understand the specifics of the profession and simply communicate with them through wine.


What motivates me to do what I do?


The fact that with my profession I help many people to get to know Georgian wine and culture. So to speak, I am intermediary between them and wine. This process is very pleasant for me. I think that wine is not only a unique product, but also a unique way to interact with people.


What is missing in Georgian winemaking industry?


Despite the fact that we are a small country, I think that we have a lot of distinctive regions and terroirs, so we can produce diverse and different wines, we just don’t have enough resources to do all this. I think this sets us apart from other countries.


Advice to those who choose this profession now:


Viticulture-winemaking is very specific field,that is why I think that it is necessary to find enough and necessary information. Finally, I would advise that everything will work out if they make this profession a part of their identity.
